For those of you who love your breakfast with a little extra sweetness, here’s the oatmeal for you. See? I told you you wouldn’t see the last of oatmeal yet. But if you’re tiring of it already, there’s only 5 more days until the end of my competition and we shall see who gets the last oatmeal!
But I promise this one tops the list of delicious, warm oat recipes to date. It’s creamy, healthy, sweet, and most importantly, chock full of banana.
Honestly, banana is not a part of my diet at this stage in the preparation because I’m so close to the show. However, my very blessed and sleepy Sweetheart was the target for this big bowl of epic oaty treasure. The lucky little devil got breakfast in bed.
And since I was able to have a little more freedom with ingredients, I did the honor of adding a little shortbread cookie crumble to his…just to push it over the edge of amazing.
The recipe I’m posting doesn’t contain this, but it’s always optional extra, as is anything with oatmeal really. So I’ll leave you with the option. Without further ado, my Banana Dolce (or sweet banana, but with a fancy french title).
Banana Dolce Oatmeal
1/2 cup oats
1/3 cup canned coconut milk (almond milk would be lovely, too)
1/2 cup water
1/2 ripe banana
1 Tbsp brown sugar (or Splenda brown sugar if you’d like to remain sugar-free)
2 Tbsp Stevia
1/2 tsp Vanilla extract
1/4 tsp caramel extract (optional)
1/2 tsp ground cinnamon
Optional Extras: shortbread cookie, walnuts, almond slices, dried cranberries, or granola
First slice the half banana and stir into the coconut (or almond) milk. Mircowave for about 30 seconds. Then remove and mash up with a fork. Add oats, water and all dry ingredients/extracts and stir. Microwave for an additional 2 minutes until oats are thick and creamy. Stir again and serve. The dish above was served with the other half of the banana sliced on the side.
