Strawberry Shortcake Protein Pancakes

Summer is the perfect time to break out one of nature’s most sweet and bright gifts. Strawberries are not only a low glycemic fruit, but they are by far one of the tastiest things to ever sprout out of the ground and make their way to my kitchen. A couple weeks ago I made a delicious protein shake from them, and today, I’m turning that shake into a stack of four adorable and delightful pancakes.

And the topping? It’s not standard maple syrup.  To keep the strawberry taste lively throughout the dish, I used a strawberry preserve to swirl over the top.  Can’t wait to make them at home?

I won’t make you hold your breath for too long (because friends don’t do that to each other)…enjoy!

Strawberry Shortcake Protein Pancakes with Strawberry Preserve Glaze

Ingredients:

1/2 cup oats

1/2 cup hot water

1/3 cup egg whites

2 TBSP sugar-free or regular strawberry preserves

2 sliced and hulled strawberries

1 scoop vanilla whey protein

1 tsp strawberry extract

2 TBSP stevia OR 10 drops of liquid stevia (vanilla flavor works beautifully)

For the Glaze you’ll need:

4 TBSP sugar-free or regular strawberry preserves

2 TBSP almond milk

Directions:

In a blender, mix all ingredients for the pancakes and blend well until smooth. Pour batter on griddle and flip when bubbling on top. Remove when done and set on a paper towel so they don’t get soggy while you finish your glaze.  This step is optional but I prefer to include it. Prepare the glaze by mixing the preserves and the almond milk in a bowl then heating over medium heat, stirring constantly until you get a slightly syrupy and smooth mixture. Plate your pancakes and pour glaze over top.

I’m so happy with these little cakes, I could eat the all summer. But then I couldn’t pay attention to all the other wonderful fruits and vegetable this season has to offer.  Which reminds me, I picked up a gigantic and perfectly purple sweet potato yesterday at the store.  It 1.5 lbs! How exciting, right? Ok, maybe not yet, but it will be once I figure out what to make with it.

I’ve got some ideas brewing.
