So I found this recipe the other day on Pinterest (where else?) for a Strawberry Shortcake Pie. I honestly don’t know why I torture myself so when I know my treats are limited for the next seven weeks.
But the damage was done. I had already indulged in the food porn and this pie was the last straw.
“I want a freakin’ strawberry shortcake pie!” I exclaimed.
So I got up from the computer, went to the kitchen and made one…skinny style, and no fork necessary.
I know you want one, too, so I’ll be nice and share the recipe. Start up your blenders!
Strawberry Shortcake Pie Smoothie
3 fresh strawberries hulled and sliced
1 scoop of vanilla whey protein powder
1 cup of cold almond milk
10 drops of vanilla liquid Stevia drops
1 Tbsp of strawberry sugar-free preserves (optional, but I like a little extra berry)
1 Tbsp vanilla sugar-free pudding mix
Blend all ingredients in a blender until smooth. You can crumble a half sheet of graham cracker on top or just stick a straw in and have at it.
Mmmm, just like that pie (or so I imagine as I sip little graham pieces through the straw and taste the cool refreshing berry. Just like summer, only a couple months early.
